Grocery list

Produce

  • 1 pound potatoes
  • Asparagus — 2 pounds total (4 cups chopped + 1 lb trimmed)
  • 1 medium red bell pepper
  • 1 medium green bell pepper
  • 2 medium red bell peppers (for ratatouille)
  • 4 cups chopped kale
  • 1 large eggplant (about 1 lb)
  • 2 medium zucchini
  • 2 medium yellow onions
  • 5 medium garlic cloves
  • 5 medium plum tomatoes
  • 1 pound baby carrots

Prep-ahead notes
